Key Lime Cake
Here's some more of my baking adventures. This was a key lime cake with Lime flavored cream cheese icing.

Sweet Potato Casserole (lost episode)
Here is an episode that was supposed to appear before Thanksgiving but you know life got in the way and it got pushed back.
I messed up on the recipe and ended up shooting the episode twice. The outcome from the 1st wasn't the greatest... lol As always I'll post the good and the bad. The second version of this episode may appear on a bonus dvd or something... lol

Episode 4: Jumbo Shrimp Pasta
This episode I'm cooking Jumbo shrimp with broccoli and cherry tomatoes. A nice and simple dish. I also grill canned pineapples which I don't recommend. Fresh pineapple is much much better. Also I had to peel the shrimp after it was grilled but that video was kinda nasty so Joe the Producer left it out. We did snap some pictures this time. We also switched from youtube to Vimeo so the show can be a little longer.... Enjoy!

Recipe:
Lemon Pepper
Old Bay
olive oil
2 cups of Fresh Broccoli
1 box of Bow Tie Pasta
1 1/2 Cherry tomatoes
6 Pineapple slices
Salt for pasta water
1 bottle Champagne dressing
Season the shrimp with lemon pepper and Old Bay seasoning. Drizzle with Olive Oil and let marinater for 30 -40 min. While that is happening chop broccoli into bite size pieces and place in a bowl.
Boil some water in a pot and season with salt. Cook pasta until tender. Drain pasta and place in bowl with the broccoli. Dress pasta and broccoli with about 1 1/2 cups of Champagne dressing
Place shrimp on skewers and grill for about 3 min on each side or until pink. Grill pineapples for 5 min on each side or until warmed thru. While shrimp is cooking slice tomatoes. After they are slices put them in pasta bowl.
Remove shrimp from grill and peel shell off shell.
Plate pasta and top with shrimp.

Salmon Fettuccine
This was a read submission. RealHustla emailed me this recipe and I figured why not try it for the first time while filming. Maybe not the best idea but we had fun shooting and cracked a few more jokes than usual. The recipe called for basil but I couldn't find any so I used spinach, I also grilled my salmon instead of broiling it. I think both ways would work. Food came out great despite some technical difficulties.
Recipe(as per Real Hustla):
This should be enough to serve two adults and one toddler. This will go good with some garlic bread and a simple baby greens salad. We don't eat bread on the side in my house and you don't really need it with this dish. It's fast, easy and my kids devour it in total silence at the table.
Ingredients:
1 to 2 tablespoons garlic.
1 to 2 tablespoons finely chopped FRESH basil. I like to reserve a little more to top the pasta after plating.
1 medium to large salmon fillet.
1/2 pint of heavy whipping cream.
1 package of FRESH, not dried fettuccine pasta.
Preparation:
1. Season salmon fillet with your choice of spices. I use dried rosemary, pepper, onion powder and Lawry's.
2. Place fish in a pan suitable for for putting right underneath the broiler in your oven and broil until flesh can be flaked away from skin but is still moist (about 10-12 minutes or less so watch closely) It does not have to be cooked through just freed from the skin.
3. Remove from heat, remove skin, and set aside.
While fish is broiling dice garlic and chop basil and sauté them in 1tblspn of olive oil or butter until garlic is translucent. This step will not affect the outcome of the flavor so choose olive oil if possible. Also start the water to boil the fettuccine. Do NOT rinse off the pasta.
4. Stir the fish into the pan with the garlic and basil being sure to break the fish into small bite sized pieces with your spatula.
5. Add all of the heavy whipping cream and start and maintain a low simmer for 3 to 5 minutes.
Start adding some love...
6. Taste the sauce and add additional Lawry's to taste. Simmer for another 5-10 minutes.
7. Add your cooked pasta directly to the sauce and stir to evenly coat.
Serve immediately and don't forget to top the pasta with some fresh basil. Add your remaining basil to your green salad for a nice surprise. To me this recipe taste best with ranch dressing although I've used vinaigrettes before with just as much satisfaction.

Stuffed Strawberries
Here is a quick episode that my producer sent to me yesterday. It's a combo of a couple things we filmed. I think we filmed this stuff while the apple pie from episode 2 was cooking/cooling. I think this one is great, you get to see me hit up my local Safeway and act a fool for a bit. Anyway Enjoy and let me know what you think. We really do listen to your feedback.
Recipe:
1 pint strawberries
1 8oz tub of strawberry cream cheese
2 oz chocolate ( I use a Hersey's bar)
2 tbls sugar
Slice ends off the strawberries so they will stand up straight.
Cut the core out of the strawberries to make room for the filling
mix the sugar and cream cheese together and put into a piping bag
pipe cheese mixture into strawberries.
melt chocolate and drizzle over the strawberries.
place in refrigerate for 10 min to harden the chocolate
